Definitely able to see the improvements! Weight is down, strength and speed are up! And I feel great on top of all of it. I haven't felt deprived (well, not totally), and I enjoy the foods I am eating. Most importantly, when I do indulge, I do so with foods that I REALLY want, not just for the sake of convenience. With the challenge over, I plan to continue my semi-Paleo way of eating, but I am definitely looking forward to being able to have some crusty bread every once in a while!

I'm kinda dissappointed because it is hard for me to gauge if I feel any different since having this sinus infection. I have dropped about 4-5 pounds, and I definitely think I look better, so I'm happy with that. Good thing is that my sinus infection seems to be progressing a lot faster than before.

0800: 2 Archer Farms Chicken and Sundried Tomato Sausages, 1 Grapefruit, Mini Larabar
1200: 4oz Salmon, 1 Sweet Potato
1530: 1 Archer Farms Chicken and Sundried Tomato Sausage, 1 Apple, Handful Mixed Nuts, 1c Carrots
1800: 5oz Flank Steak w/Chimichurri, 1/2c Broccoli, 1/2c Asparagus
2100: 1T AB
Yay!!! I don't feel like crap anymore! I have energy, and I feel really, really good :) I do still miss certain things (like someone was talking about Bubble Room cake today and I would probably kill for a slice of red velvet) but I'm finding it easier day by day.

1515: 3oz Chicken Breast, 1c Green Beans Almandine, 1 Apple
2000: 2 Archer Farms Sundried Tomato Chicken Sausages, 1c Strawberries, 2 Celery Sticks w/ AB
2100: 1 Grapefruit
Definitely a struggle while working in the ER. I only get one lunch break, so I need to make sure I have things that are easily eaten quickly. I'm finding that the fruits and meats (for the most part) aren't too difficult, but the veggies seem to be my hardest thing to incorporate. Just gotta try harder!

1730: 3 Eggs, 1/2 Yellow Bell Pepper, 1c Strawberries
2045: 8oz Almond Milk, 1 Carrot
Today was not a great start. Food wasn't bad, but did not get to work out (dealing with a family crisis). Not sure how this is going to turn out with having to deal with current situations. Will try and make the best of it. All I want is a good stiff drink right now...
